The prices of essential ingredients like garlic, ginger, and onion have risen sharply in Kolkata, causing budget constraints for homes and restaurants. The price of garlic, specifically the Uttar Pradesh variety, has doubled to Rs 300 per kg. Ginger prices have steadily increased over the past few months, with disruptions in supply due to the ongoing strife in Manipur. The onion market is characterized by instability, with prices fluctuating from Rs 40 to Rs 70 per kg. Additionally, winter vegetables such as capsicum and yellow bell pepper are available at high prices.
